Grown in the mountain region of Shizuoka Honyama, KOJU is an exceptionally rare tea cultivar developed from a naturally occurring tea tree selected for its extraordinary fragrance. After years of careful observation and experimentation, tea maker Tatsuji Takahashi found that this unique plant revealed an aroma unlike any other when the leaves were gently withered and pan-fired.
Unlike most Japanese green teas, which are steamed immediately after harvest, The freshly harvested KOJU leaves are gently rested before processing, allowing their natural fruity aroma to develop. The leaves are then finished using a traditional Taiwanese-style pan-firing machine, creating beautifully curled leaves and a uniquely complex flavor profile.
